ANZAC Biscuit Recipe

This is a healthy twist on an old classic. Enjoy a bickie with a cup of tea and friends this ANZAC Day.
Ingredients
- 1 cup wholemeal flour
- 2 cups rolled oats
- 1/2 cup coconut
- 1/2 teaspoon baking soda
- 2 tablespoons boiling water
- 2 tablespoons maple syrup
- 1/4 cup of honey
- 2 tablespoons coconut oil
- 1/3 cup mixed seeds-sunflower and pumpkin
Directions
- Preheat the oven to 180 degrees celcius and line a baking tray with baking paper.
- In a large saucepan melt coconut oil, maple syrup and honey over a low heat.
- Remove from heat and set aside.
- Dissolve baking soda in water then stir into the melted mixture.
- Add flour, rolled oats and coconut and stir to combine.
- Put tablespoonfuls of mixture onto baking tray and flatten gently with your fingers.
- Bake for approximately 15 minutes or until golden.
